Nikon's Log-Format/RAW Technical Guide: for N-Log, expose an 18% grey card to about 35% on the waveform (10-bit code value around 372).

Camera settings

Video recording menu: Video file type = N-RAW 12-bit (NEV), ProRes RAW HQ 12-bit, ProRes 422 HQ 10-bit or H.265 10-bit (MOV), then Tone mode = N-Log. Internal recording.
The lowest N-Log ISO in mode M is Lo 2.0 per the current manual. Maximum sensitivity can't go below ISO 1600. Nikon quotes 13+ stops at ISO 800.
